Taco Soup

1 to 1 1/2 pounds ground beef
1 pkg Taco Seasoning
2 cans Whole Kernel Corn, undrained
2 cans Ranch Style Beans, undrained
1 can Black Beans, Rinsed and Drained
2 cans Diced Tomatoes with Jalapeños, undrained

Corn Chips
Shredded Cheese
Diced Onion
Sour Cream

Brown beef over medium heat until no longer pink; drain. Stir in the taco seasoning, corn, beans, and tomatoes.  Cover and simmer for 15 minutes or until heated through, stirring occasionally.  Place corn chips in soup bowls; ladle soup over top.  Top with shredded cheese, diced onion, and sour cream if desired.

Mexican Chow Mein

Mexican Chow Mein is a great way to use leftover Chili.  Although there have been times that I make Chili  for the sole purpose of having Mexican Chow Mein.

The following things are layered on one's plate in the order given:

Crushed Tortilla Chips
Cooked Rice (Brown or White)
Chili
Shredded Cheese
Lettuce
Tomatoes
Diced Onions
Sour Cream
Salsa


Chili Recipe (Optional)

 1 1/2 lb Ground Beef, browned (I season mine with salt, pepper, minced onions, basil, oregano, parsley, and garlic powder when I brown it)
5 (15 oz) cans Chili Beans (Hot) - I use Kroger brand
1 can (26 oz.) Hunts Zesty and Spicy Spaghetti Sauce
2 (14.5 oz.) cans Tomatoes w/ Jalapeños

Mix everything together in a large stock pot and bring to boil over medium heat.  Turn down heat, cover pan, and simmer for an hour.  Stir often.

Oatmeal Raisin Cookies

Chocolate Chip Cookies

Tonight while it was snowing and blowing outside I made cookies. Here is the link to the recipe for my Chocolate Chip Cookies. I really like this recipe. Tonight was the first time I made the Oatmeal Raisin Cookies and while they are okay they are not what I am looking for. If anyone has a really good recipe for Oatmeal Raisin Cookies that they would like to share, I would appreciate it. I also mixed up Sugar Cookies and put them in the refrigerator for the night. We are not having school tomorrow but instead we will make and decorate sugar cookies. This is the first time I have tried the sugar cookie recipe so we will see how it turns out.
